You totally miss the point here. Crafting professions are not about the items, but about two or three things they can do for themselves which give them a significant advantage towards those who can't do them.
The only time when items made from crafters play a certain role in the game is after the launch of an new add-on. I make good gold with some black smithing items right now, because many players are not reequipped jet and strive for intermediate equipment to go for harder content.
But the main advantage for an blacksmith is his ability to put two additional gem slots on his own (!) equipment which others will never get. This does not seem to be important. But once you will understand the balance of the game in the end game, you will also understand how important such a slot on an item is.
Those slots allow to tanks for example to become immune to critical hits 2 or 3 items sooner than normally which means in return they can go for harder tasks and better equipment 2 or 3 item drops sooner. Usually this will save them 3-6 instance runs on annoying instances they would just do, because they badly need this one item.
Blacksmithing is truly the most important and useful profession for tanks.
As you wrote this, Patch 3.0 was not released yet. But Burning Crusade was live. And at this time a Black Smith could find really cool item recipes at the end game which would give him access to some cool epic equipment. So all I wrote did also apply, just not with the same kind of items.
